Useful Information
German (blue) chamomile is one of only a few plants which can produce a very high concentration of the chemical chamazulene, which gives it a deep blue colour and its thick consistency. The other two being tansy and yarrow. Chamazulene is not present in the fresh flower, but develops after distillation. It can also form when the flowers are dried which is why dried chamomile flowers may take on a blue tinge.
